A Classic Steamed Egg Pudding Dessert

Vattalappam is a soft, mildly spiced steamed dessert made with eggs, sugar, milk, and aromatic spices. Itโ€™s simple, comforting, and perfect for festive or weekend indulgence.

๐Ÿ“ Ingredients

Eggs โ€“ 6

Sugar โ€“ ยพ cup

Cinnamon sticks โ€“ 2

Cardamom โ€“ 3 pods

Milk โ€“ ยฝ cup (heated, not boiling)

Milk powder โ€“ 1โ€“2 tablespoons (optional, for extra richness)

Ghee โ€“ for greasing the bowl

๐Ÿง‚ Step 1: Prepare the Sugar & Spice Powder

Add the following to a mixer:

ยพ cup sugar

2 cinnamon sticks

3 cardamom pods

Grind into a very fine powder.

(Optional: Sieve once for an extra smooth texture.)

๐Ÿฅš Step 2: Beat the Eggs

Break all 6 eggs into a large bowl.

Beat well using a hand beater or whisk until slightly frothy and well combined.

๐Ÿฏ Step 3: Add the Sugar Gradually

Slowly add the ground sugarโ€“spice powder to the beaten eggs.

Keep beating continuously to avoid lumps and ensure even mixing.

๐Ÿฅ› Step 4: Add Milk (Optional Milk Powder)

Add ยฝ cup of warm milk gradually into the egg mixture.

If using, add 1โ€“2 tablespoons of milk powder at this stage for added sweetness and richness.

Beat gently until everything blends smoothly.

๐Ÿฅฃ Step 5: Grease & Strain

Grease a heatproof bowl generously with ghee.

Strain the egg mixture into the greased bowl to remove any bubbles or residue.

This step ensures a silky smooth texture.

๐Ÿ”ฅ Step 6: Steam the Vattalappam

Take a large vessel and add a little water at the bottom.

Place a stand or plate inside and keep the bowl in the center.

Cover with a lid and steam for 25 minutes on medium heat.

๐Ÿ‘‰ Do not let water splash into the mixture.

โ„๏ธ Step 7: Cool & Unmould

Once cooked, turn off the heat and allow it to cool completely.

Gently loosen the sides and unmould onto a plate.

โœจ Final Result

Your soft, aromatic, and delicious Vattalappam is ready to serve!

Enjoy it warm or chilled โ€” both taste equally good.

๐Ÿ’ก Tip:

For a richer version, you can garnish with roasted cashews or raisins before steaming.
