A Classic Steamed Egg Pudding Dessert
Vattalappam is a soft, mildly spiced steamed dessert made with eggs, sugar, milk, and aromatic spices. Itโs simple, comforting, and perfect for festive or weekend indulgence.
๐ Ingredients
Eggs โ 6
Sugar โ ยพ cup
Cinnamon sticks โ 2
Cardamom โ 3 pods
Milk โ ยฝ cup (heated, not boiling)
Milk powder โ 1โ2 tablespoons (optional, for extra richness)
Ghee โ for greasing the bowl
๐ง Step 1: Prepare the Sugar & Spice Powder
Add the following to a mixer:
ยพ cup sugar
2 cinnamon sticks
3 cardamom pods
Grind into a very fine powder.
(Optional: Sieve once for an extra smooth texture.)
๐ฅ Step 2: Beat the Eggs
Break all 6 eggs into a large bowl.
Beat well using a hand beater or whisk until slightly frothy and well combined.
๐ฏ Step 3: Add the Sugar Gradually
Slowly add the ground sugarโspice powder to the beaten eggs.
Keep beating continuously to avoid lumps and ensure even mixing.
๐ฅ Step 4: Add Milk (Optional Milk Powder)
Add ยฝ cup of warm milk gradually into the egg mixture.
If using, add 1โ2 tablespoons of milk powder at this stage for added sweetness and richness.
Beat gently until everything blends smoothly.

Grease a heatproof bowl generously with ghee.
Strain the egg mixture into the greased bowl to remove any bubbles or residue.
This step ensures a silky smooth texture.
๐ฅ Step 6: Steam the Vattalappam
Take a large vessel and add a little water at the bottom.
Place a stand or plate inside and keep the bowl in the center.
Cover with a lid and steam for 25 minutes on medium heat.
๐ Do not let water splash into the mixture.
โ๏ธ Step 7: Cool & Unmould
Once cooked, turn off the heat and allow it to cool completely.
Gently loosen the sides and unmould onto a plate.
